How I felt:

One of the beneficial things about the weekend, for me, is that it enables me to sleep in late. And by late, I mean LATE. No judgement but I typically don’t wake up until after 12pm, and my day doesn’t really start until after 2pm. Then again, if I find myself sucked into the endless vortex of Netflix, I may not even start my day until after 4pm. (seriously, do not judge me people! I know you are all guilty of this too).

I was absolutely gutted when I finished my milk yesterday. Cereal and milk is my all-time favorite breakfast food and I really thought I was going to make the milk last till the end of the week. Nevertheless, since I woke up in time for lunch, I really didn’t really need to eat proper breakfast foods. (also, you should know that I have this thing where certain foods just cannot be eaten in the morning. Basically, if it is not cereal, pancakes, waffles, eggs or oatmeal, will not eat it earlier than noon).

Contrary to my grievousness over my milk, I was quite relieved to have finished the mac n cheese. Though it was very delicious, I was getting tired of constantly eating it almost every single day.

But I find that most of my food rations were severely depleting and I still had a weekend’s worth of meals left. I know that I made it a goal to buy fruit, I instead opted to buy red kidney beans and chickpeas (I went to Publix this time and not Wal-Mart). To be honest, I was really content with this decision. Beans are not only extremely healthy, but they are also very filling. They make for a low-maintenance meal that takes minimal preparation and cleanup; perfect for the lazy college girl.

Since my day started so late, I decided to save the beans and chickpeas for my Sunday meals. Instead of my usual heavy dinner, I ate oatmeal with a salad and a small desert. Normally this wouldn’t be satisfying for me but it was sufficient enough to keep me happy.

I’d say that my sleeping habits played in my favor for the SNAP challenge because it helped to prolong my food rations. And since I bought more food with my remaining money, I felt almost rejuvenated to have something new to add to my diet. Let me tell you, eating with limited options gets old real fast; especially with an apartment filled with forbidden goodies.

Daily Question: Many low income families have to make decisions between groceries, prescriptions, gas for the car, utilities and other household necessities. After living on a limited food budget, has your perspective changed?
